$47 million expansion and new equipment expected to create up to 27 new jobs, WEDC is authorizing up to $450,000 in tax credits
MADISON, WI. OCT. 29, 2026 – Sartori Company is investing $47 million to expand and equip its whey converting site in Plymouth. The project will add 68,000 square feet to an existing 106,254 square foot converting plant to house five new production lines that will support the company’s next five years of business growth and create up to 27 new jobs.
“Our business has experienced significant growth over the past decade,” said Bert Sartori, Sartori Company CEO. “This 68,000-square-foot expansion of our converting facility will increase capacity and create opportunities for innovation as we continue sharing great cheese with customers and consumers around the world.”
A fourth generation, family-owned company, Sartori’s mission is to make the best cheese in the world. Founded in 1939 by Pablo Sartori, the company has won more than 330 domestic and international awards.
Almost a century later, Sartori still operates from Wisconsin. Sartori chose the dairy state for its rich agricultural history, work ethic and ideal climate for dairy farming.
“Wisconsin has an incredible dairy heritage, and we’re fortunate that our milk comes from local Wisconsin family farms,” said Sartori. “With this support, we’re proud to continue investing in Plymouth and building for the future. This expansion will support demand for top-quality local milk, create 27 new jobs, and strengthen the communities that have supported Sartori for generations.”
The Wisconsin Economic Development Corporation (WEDC) is supporting the project by authorizing up to $450,000 in state income tax credits over the next three years. The actual amount of tax credits Sartori Company will receive is contingent upon the number of jobs created and the amount of capital investment during that period.
“Wisconsin cheese is recognized internationally for its excellence, and Sartori cheese consistently ranks among the best in the world,” said John W. Miller, secretary and CEO of the WEDC, the state’s leading economic development organization. “Sartori Company’s continued investment in the state is a testament to Wisconsin’s agricultural tradition and commitment to dairy. We are proud to support Sartori as they begin this next chapter of their growth.”
Wisconsin is the top cheese producer in the U.S. The state produces 25% of the nation’s cheese and 14% of its milk. Plymouth, where Sartori was founded and still operates from, is even known as the “Cheese Capital of the World” and is responsible for producing more than 14% of all the cheese consumed in the U.S.
Sartori broke ground on the project in December 2025 and expects to complete the building by spring 2027. Once the building is completed, production lines will be added in phases with the full project expected to be completed in 2030.
