The Wisconsin Potato and Vegetable Growers Association (WPVGA) has three winning recipes, chosen from our Celebrate Cinco de Mayo Recipe Contest.

Champion Recipe – Cinco de Mayo Fiesta Potato Waffles. Get out your waffle iron and enjoy this unique potato waffle recipe from Nancy Judd, of Alpine, Utah. The potato cakes are a combination of sweet potatoes and golden potatoes, chayote squash (or zucchini), corn, jalapeno, and diced red and green peppers with crumbled Queso Fresco (or feta) cheese. Just top with homemade avocado cream and serve with chorizo, eggs and a margarita for a perfect finish.
