Contest winners are mad about Crave Brothers mascarpone

Waterloo, Wisconsin, April 12, 2012—Creative home cooks who won the Mad About Crave Brothers Mascarpone Contest have made it clear that creamy Mascarpone cheese can be enjoyed throughout a meal. Their winning recipes, all featuring Crave Brothers Farmstead Classics Mascarpone, celebrate the richness, versatility and quality of this farmstead fresh cheese.

Top honors have been awarded to Mary Shivers of Ada, Oklahoma, for her dessert of Chilled Raspberry Soup with Lemon Mascarpone Sorbet. In addition to the $200 prize for winning the dessert category, she received an Apple iPad for being the Overall Winner. Her recipe for Chilled Raspberry Soup with Lemon Mascarpone Sorbet is a light, summery combination that gets its richness from Crave Brothers Mascarpone. The soup starts with fresh raspberries, fresh lemon juice, white grape juice and sugar. The mixture is cooked until the berries are soft, then cooled and pureed. This fruity puree is poured into a large bowl with mascarpone, and beaten on low speed until it the soup is well mixed. The sorbet is made by simmering water, sugar, and lemon juice. Lemon zest and mascarpone are added to the mixture once it has cooled, then the sorbet is made in an ice cream freezer according to manufacturer’s directions. To serve the dessert, simply ladle soup into bowls and add a small scoop of sorbet in the center of each. Garnish with a mint sprig and a few fresh raspberries.

Nadine Mesch of Mount Healthy, Ohio, created the winning appetizer recipe. She received the $200 prize for her Mascarpone, Fig, Sweet Onion and Candied Bacon Pizza featuring layers of rich flavor. The bacon is dredged in a mixture of brown sugar and cayenne pepper before being crisped and caramelized in the oven. Other pizza topping ingredients include sautéed sweet onions, and a syrupy mixture of figs, red wine and basil. The pizza is topped with dollops of Mascarpone before baking.

Veronica Callaghan of Glastonbury, Connecticut, submitted the winning entrée recipe and won the $200 prize for her Creamy Mascarpone Chicken Florentine Cups. The appetizer cups are created by baking wonton wrappers in the individual cups of a muffin tin. The rich filling is made on the stovetop. It’s a combination of Mascarpone, spinach, shallot, milk, diced chicken, diced Farmer’s rope cheese and Parmesan cheese along with salt and pepper. After the cups are filled with the Mascarpone-Chicken mixture, they’re topped with Parmesan and baked until lightly browned and bubbly.
