Marcus Hotels & Resorts: Hilton Madison Monona Terrace names David Mitchel as new Executive Chef

MILWAUKEE, July 16, 2026 – Hilton Madison Monona Terrace, managed by Marcus® Hotels & Resorts, today announced David Mitchel as its new executive chef. Chef Mitchel will oversee the hotel’s culinary operations, including banquets and catering, menu development, and the overall execution of the property’s food and beverage program, including at its signature restaurant, The Audrey Kitchen + Bar

Madison Summer Restaurant Week, which takes place July 20-25, 2026, is a semi-annual dining event showcasing the city’s vibrant culinary scene through curated prix-fixe menus at the city’s most celebrated spots. Chef Mitchel developed creative new offerings for The Audrey Kitchen + Bar’s Restaurant Week lunch and dinner menus. The lunch menu offers a variety of options, including heirloom vegetable gazpacho, smash burger, pesto grilled cheese, and chicken tostadas with special desserts such as toasted angel food cake, fresh berry tart or vanilla panna cotta. For dinner, guests can indulge in hand cut tagliatelle pasta, cauliflower soup, grilled hanger steak, pan seared Atlantic salmon or summer vegetable risotto, with dark chocolate cremeux among other desserts to complete the experience.   

Chef Mitchel joins the Hilton Madison Monona Terrace with more than 14 years of culinary experience spanning menu formation, kitchen operations, food safety management, and leadership roles. Most recently, he served as unit chef at the University of Wisconsin – Madison, where he oversaw operations for Liz’s Market, serving approximately 550 students daily. Prior to that, Chef Mitchel led culinary operations at acclaimed restaurants across North Carolina, Georgia, and Connecticut. He earned an associate degree in culinary arts from the New England Culinary Institute in Montpelier, Vermont.
