DE PERE, WI– Cocoon Brewing celebrated breaking ground for a new 6,000 SF brewery with a taproom and kitchen on Friday, May 13, 2022, and has selected Bayland Buildings as the design/build general contractor. Cocoon Brewing is a craft brewery developed by Ledgeview resident Matt Walters and twin brother Mike Walters. Cocoon Brewing aims to be a destination for connection and experience. Nestled on four acres at 2233 Kaftan Way, the brewery is a toast to the collective moments of curiosity and adventure that shape us, featuring a carefree backyard, comfortable taproom, and distinctive “cocoon” structures for small groups seeking a singular experience.
The brewery plans to provide a wide variety of beer styles, produced by Head Brewer Josh Green, and anchored by IPAs and pilsners while exploring inventive flavors across the spectrum of sours, stouts, and lagers. Additionally, the bar will provide a curated collection of cocktails and offerings outside of beer to go alongside a kitchen featuring fresh pizzas and snacks. A large outdoor area will afford space for the whole family to run around, play games, chase a butterfly, soak up some live music and host occasional food trucks.
Cocoon Brewing aims to be a central hub for the De Pere/Ledgeview community. The varied spaces offered at the facility are planned to accommodate a refreshing beverage after work or a round of golf, a perfect stop for the craft beer tourist, a getaway for a wedding party prior to the reception, a private birthday gathering on the weekend, or a boisterous crowd on game day. In addition, Cocoon’s development hopes to invigorate further developments along Monroe Road for the community.
In future years, expansion at the site could occur to facilitate larger production capacity or simply to enhance the onsite amenities as a destination for patrons to enjoy the community. Cocoon Brewing aims to be a stalwart in the community as well as a distinctive brand in craft beer. Let’s Hang.
