UW-Madison: International meat industry conference

The University of Wisconsin-Madison and Oscar Mayer/Kraft Foods will co-host the American Meat Science Association’s (AMSA) 67th Reciprocal Meat Conference, the meat industry’s premier conference, June 14-18. More than 750 people are expected to attend the event, which has not been held in Madison for more than 50 years.

This international forum brings together all segments of the meat industry – commercial, academic and government – to address the needs of meat processing and marketing firms and others in the biological and nutritional sciences. The event will showcase Wisconsin’s unique meat processing industry and celebrate the 50th anniversary of the AMSA, which was founded at UW-Madison.

HIGHLIGHTS

Keynote presentations include Jayson Lusk, author of “The Food Police: A Well-Fed Manifesto about the Politics of Your Plate;” Jack Bobo who will address, “Can Agriculture Save the Planet Before It Destroys It?” and Robyn Warner, who will cover aspects of a sustainable meat industry.

Other highlights include an Iron Chef competition/processed meats clinic for university students from around the country, meat processing technology demonstrations, and workshops including Culinary Aspects of Product Research and Development and Research Priorities for Meat Science.

– Monona Terrace Rooftop: Opening reception, Sunday, June 15 from 6:30-8 p.m.: Display of processed meats from members of the Wisconsin Association of Meat Processors. Also featured will be a polka-style band, with emeritus member of AMSA in the band.

– Monona Terrace Hall of Ideas: Monday, June 16, from 10-11 a.m. and 4-5 p.m., poster viewing session.

– Mallards Stadium: Monday, June 16 from 6:30-8 p.m. Family picnic: Icons of Wisconsin – Wienermobile, Johnsonville grill cooking brats, Bucky Badger, Milwaukee Brewers racing sausages during attendee softball championship game.

– UW-Madison Muscle Biology and Meat Science Building, 1805 Linden Drive, Madison: Tuesday, June 17 from 2-5 p.m.: Meat processing technology demonstration.
